It has become a perfect substitute for chocolate.<\/p><p>It can be used in cakes, cookies, drinks and confectionery. It can be used on its own or combined with cocoa or chocolate. For each part of cocoa, 1.5 to 2 parts by weight of carob can be substituted in most recipes. However, it&#8217;s best to add strong-flavored ingredients to enhance its taste, such as cinnamon or mint.<\/p><p>Naturally sweeter (40% glucose and saccharose) than cocoa, carob powder cuts the amount of sugar needed in our dishes by a factor of four. They appreciated its sweet, floury flesh, and it was eaten as is, in flour or as a fermented drink.<br>It is still used as animal feed: in Portugal, breeders enrich their horses&#8217; diet with carob.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-2ee4dbc e-con-full e-flex e-con e-child\" data-id=\"2ee4dbc\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-b3aa217 elementor-widget elementor-widget-text-editor\" data-id=\"b3aa217\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\tThe Zayan Berbers of the Middle Atlas mountains in Morocco use it for its anti-diarrheal and constipation properties. Thanks to its high fiber content, it regulates intestinal transit. It is administered in the form of a drink, like hot chocolate.\nIn Cyprus, carob is made into confectionery, as well as into a syrup which, as it congeals, resembles barley sugar.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-390ef94 e-con-full e-flex e-con e-child\" data-id=\"390ef94\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-89bc460 elementor-widget elementor-widget-text-editor\" data-id=\"89bc460\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\tCarob is marketed in solid (powder, chips) or liquid (syrup) form. Traditionally, carob was used as a substitute for cocoa in hot chocolate, delighting children on their way to school, as well as being an excellent intestinal regulator.\nEven today, some chefs use carob as a substitute for cocoa in their recipes.\nGuy Martin, chef of the Grand V\u00e9four in Paris, doesn&#8217;t hesitate to use whole dried carob in his recipes such as Chocolate Soup <em>&#8211;
